Apple Dumplings

These Apple Dumplings are a favorite in our house and are totally irresistible, with just the right amount of apples, cinnamon and crust. The recipe is made from scratch with a buttery yeast dough and grated apple filling enriched with a lot of cinnamon. My family enjoyed these apple dumplings which are just perfect for autumn and winter days.

My husband loves apple recipes, and whenever I have the chance I try to make various apple desserts like this apple upside down cake or apple cake.  For a delicious breakfast I sometime make apple galette by replacing peaches with apples from  this recipe.

How to make apple dumplings

Begin by dissolving the fresh yeast in the milk. In a medium-sized bowl, thoroughly mix the butter with flour and sugar. Add the eggs and the milk with yeast, and blend until well combined. Knead the mixture well, cover it with plastic wrap, and refrigerate for about 1 hour to allow the yeast to develop.

While the dough chills, prepare the apple filling. Peel and grate the apples. Squeeze the grated apples with your hands to remove excess juice, then transfer them to a large bowl. Stir in the semolina flour and cinnamon. Add sugar just before you’re ready to roll out the dough.

Preheat the oven to 180°C (350°F).

Once the dough has chilled, cut it into 3 equal pieces. Sprinkle flour onto the working surface. Using a rolling pin, roll out each piece into a rectangle approximately 12 inches (30 cm) long and 10 inches high. Cut the dough into 12 squares, each about 4 inches (10 cm) wide.

Place spoonfuls of the apple mixture in the center of each square. Bring up two opposite sides of the dough to cover the filling, then bring the other two sides together, pinching and twisting them to seal the apple mixture inside. Place the filled pastries on a greased baking tray.

Bake for about 20 minutes or until they are nicely browned. Once cooled slightly, sprinkle powdered sugar on top of each pastry.

These apple dumplings are totally irresistible, with just the right amount of apples, cinnamon and crust simply perfect for autumn and winter days.

Ingredients
  

  • 3 cups (380g) flour
  • 2 sticks (200g) butter , cut in small cubes
  • 3 eggs
  • 2 tbsp (30ml) milk
  • 10 g fresh yeast (1 1/4 tsp active dry yeast)
  • 3 tbsp sugar

Filling

  • 2 pounds (1kg) apples
  • 1 tbsp semolina flour
  • 4 tbsp sugar
  • 1 tsp cinnamon

Garnish

  • Powdered sugar

Instructions
 

  • Dissolve the fresh yeast in the milk. In a medium sized bowl mix well the butter with flour and sugar.
  • Add the eggs and the milk with yeast and mix until well blended. Knead well, cover with plastic wrap and refrigerate for about 1 hour to let the yeast develop. 

Prepare the apple filling.

  • Peel and grate the apples. Press the grated apples with your hands to remove the juice and put the pressed apples in a large bowl. Stir in semolina flour and cinnamon. Add sugar just before starting to roll the dough. 
  • Preheat the oven to 180 (350F).
  • Cut the dough into 3 equal pieces. Sprinkle flour on the working surface. Using a rolling pin roll out each piece into a rectangular about 12 inches (30 cm) long, 10 high. Cut in 12 about 4 inches (10 cm) squares. 
  • Add spoons of apple mixture in the center of each square. Bring up 2 opposite sides of the dough to cover and bring the other 2 together, spin and cover the apple mixture. Place them in a greased baking tray. 
  • Bake for about 20 minutes or until nicely browned. When cooled enough sprinkle powdered sugar on top of each. Enjoy!

    I have dry yeast only. I think I should use warm water.
    the extra water wouldn’t destroy the recipe?

      No it won't destroy the recipe, but you could also dissolve the dry yeast in milk. Whatever you prefer best.

    My first time working with yeast dough so made half the recipe. I thin-sliced my apples and cooked the filling. I used half white,
    half piloncillo sugar plus cardamom. I was not facile enough to make your cool shaped dumplings – instead made a lattice, braided long roll thing. your recipe is wonderful. Success! Thank you. I can’t believe I actually made something so wonderful.
