Begin with heating oil over medium-high heat in a saucepan. Sauté onions and garlic until they soften for about 5 minutes, creating a flavorful base for the dish. Introduce carrots, red pepper, and celery root into the mix, sautéing them for 5 minutes more, enhancing their natural goodness.

Next, sprinkle in paprika and add frozen peas, stirring quickly to ensure even distribution. Adjusting for canned peas? Check the notes below for a seamless transition. Pour in the vegetable stock, tomato puree, soy sauce, salt, pepper, parsley, and dill. Let it come to a gentle boil.

Cover the saucepan, and reduce the heat to low, allowing the vegetables to tenderize over the next 15-20 minutes. Now, prepare a mixture of cornstarch or flour with milk, introducing it to the pea stew and stirring until the stew achieves the desired thickness. A pinch more salt and pepper, if necessary, adds the finishing touch.

This ensures a good integration of the canned peas, maintaining the desired consistency of the pea stew.

Ingredients
  

  • 1 pound (500g) frozen peas or 28 oz (800g) canned green peas
  • 1 large onion, diced
  • 2 garlic cloves ,minced
  • 1/3 cup celery root, diced
  • 1 carrot, diced
  • 1 red pepper, diced
  • 1 tsp (3g) paprika
  • 2 cups (500ml) vegetable stock or water
  • 3/4 cup (180g) tomato puree
  • 1 tbsp (15g) soy sauce , optional
  • 2 tbsp fresh dill, chopped
  • 2 tbsp fresh parsley, chopped
  • 1/2 cup milk
  • 2 tbsp (16g) cornstarch or flour
  • salt and freshly ground black pepper

Instructions
 

  • In a saucepan heat oil over medium-high heat. Cook onion and garlic for about 5 minutes until softens. 
  • Add carrot, red pepper and celery root and sauté for 5 minutes more.
  • Add paprika and frozen peas and give a quick stir. *For canned peas check the notes below.
  • Add the vegetable stock, tomato puree, soy sauce, salt and pepper, parsley and dill. Bring to a boil.
  • Cover, reduce heat to low, and simmer until vegetables are tender, for about 15-20 minutes.
  • Mix the cornstarch or flour with milk and add to the pea stew. Stir constantly until the stew thickens. Season with more salt and pepper if needed. Remove from heat and serve with homemade freshly baked bread, pickles and your favorite choice of meat, whether chicken, fish, red meat or sausages.

Notes

*For canned peas add the peas and water from the can only after the vegetables are simmered and tender, after step 5. Also, reduce the vegetable stock or water from step 4 to 1 cup in this case, as you use the water from the can as well. Bring the mixture to a boil before adding the cornstarch milk mixture.
