The broccoli puree is enriched with potatoes, parsley and sour cream. We find it very flavorful and looks quite sophisticated.

Broccoli Puree with Sesame and Chicken
This Broccoli Puree with Sesame and Chicken is an easy recipe, tasty and elegant perfect for dinner or lunch.Â
Ingredients
Broccoli puree
- 1 pound (500g) broccoli florets
- 1 potato, peeled
- 1/4 cup (60ml) vegetable stock
- 1 parsley root, peeled
- 1 tbsp sour cream
- salt and freshly ground black pepper
Garnish
- 2 or 3 sesame seeds
Chicken Marinate
- 1 chicken breast, cut into 4 slices and crusted
- 2/3 cup (160g) yogurt
- 1 tbsp olive oil
- Fresh juice from 1/2 lemon
- 1 large garlic clove
- 2 basil leaves, ripped
- salt and freshly ground black pepper
Instructions
- Mix all marinate ingredients in a medium bowl, add chicken breast cover and refrigerate for about 20 minutes.
- Place potato and parsley root on a steamer rack over boiling water and steam until tender. Then steam the broccoli for about 10 minutes until tender. Let them cool. (if you don't have a steamer rack, boil the vegetables until tender).
- Transfer the vegetable to to the bowl of a food processor. Add vegetable stock and process until smooth. Transfer the vegetables to a medium bowl, add sour cream, salt and pepper and mix until well blended. The puree is ready to serve.
- Roast sesame seeds in a dry frying pan for 2 minutes, over medium-low heat. Shake the pan constantly so they can evenly roast. Cook until sesame seeds rich a light golden brown color. Pour into a bowl and set aside to cool.
- In a medium frying pan melt butter and 1 tbsp oil over medium high heat. Add chicken and don't touch the chicken for at least 2-3 minutes until forms a golden crust. Flip the chicken and leave it on the other side another few minutes.
- When done serve with broccoli puree and garnish roasted sesame seeds.
